Clean and soak clams to remove sand. Avoid eating the dark stomach, as it can be gritty.
Ingredients:
  • 1 kg razor clams, from sustainable sources
  • 2 fresh red chillies
  • 3 cloves of garlic
  • 3 sprigs of fresh rosemary
  • 1-2 lemons
Instructions:
  • - Preheat the oven to highest temperature. - Rinse clams under cold water, remove any seaweed, and ensure shells are closed. - Place clams in roasting tray and top with sliced chillies, garlic, and rosemary. - Drizzle with olive oil and roast until shells begin to open, about 5-6 minutes. - Rotate tray for even cooking, then continue roasting until all clams have opened. - Squeeze half a lemon over clams, transfer to serving dish, and spoon tray juices on top. - Drizzle with extra virgin olive oil and serve with crusty bread. - Accompany with lemon wedges for squeezing.
