Roasted Red Bell Pepper Bruschetta

Try these quick and tasty bell pepper bruschettas for a delicious appetizer in no time!
Ingredients:
  • 16 diagonal slices baguette French bread, 1/2 inch thick
  • About 1/4 cup olive oil
  • 8 to 10 large cloves garlic
  • 1 jar (7 oz) roasted red bell peppers
  • 2 tablespoons chopped flat-leaf (Italian) parsley or 1 teaspoon parsley flakes
  • 2 tablespoons shredded Parmesan cheese
  • 1 tablespoon olive oil
Instructions:
  • Preheat the oven to 375°F. Arrange the bread slices on an ungreased cookie sheet. Drizzle each bread slice with a teaspoon of olive oil from the 1/4 cup. Bake for about 4 minutes until golden brown. Flip the bread over and bake for an additional 4 minutes until golden brown.
  • Cut each garlic clove in half, then use the cut sides to infuse the toasted bread slices with flavor. Discard garlic halves after rubbing.
  • Rinse the red peppers in a strainer. Slice them into 1/2-inch strips. Combine with parsley, Parmesan cheese, 1 tablespoon of olive oil, salt, and pepper in a bowl. Spread over toast.
