Delicious Roasted Red Bell Pepper Dip with garlic, balsamic vinegar, and creamy mayonnaise.
Ingredients:
  • 1 clove garlic
  • 1 cup mayonnaise
  • 1 cup roasted red bell peppers
  • 1 teaspoon balsamic vinegar
  • 1 fresh red bell pepper, minced
Instructions:
  • In a food processor or mini chopper, blend garlic and mayonnaise until smooth. Add roasted bell peppers and pulse until incorporated.
  • Transfer to a bowl and gently mix in the balsamic vinegar and minced fresh red bell pepper. Refrigerate for an hour. Enjoy with fresh jicama, celery, carrots, bread sticks, or tortilla chips.
