Roasted Red Pepper Dressing

Versatile sweet and tangy vinaigrette, perfect for salads, meats, and grilled veggies.
Ingredients:
  • 2 red bell peppers
  • 2 yellow bell peppers
  • 0.75 cup red wine vinegar
  • 1 cup extra virgin olive oil
  • 1 teaspoon salt
Instructions:
  • Preheat the broiler in the oven and position the rack 6 inches below the heat source. Cover a baking sheet with aluminum foil.
  • Halve the peppers vertically, removing the stem, seeds, and ribs. Place the peppers cut-side down on the baking sheet.
  • 1. Broil the peppers until the skin blackens and blisters, approximately 5 minutes. 2. Place the blackened peppers in a bowl and cover tightly with plastic wrap to steam while they cool for about 20 minutes. 3. After cooling, peel off and discard the skins. 4. Transfer the roasted peppers to a blender or food processor. 5. Add red wine vinegar, olive oil, and salt. 6. Blend until smooth.
