Roasted squash and sweet potatoes elevated with creamy goat cheese and sweet honey for a gourmet vegetarian side dish.
Ingredients:
  • 2 tablespoons olive oil, or as needed
  • 1 butternut squash - peeled, seeded, and cut into small slices
  • 2 large sweet potatoes, peeled and cubed
  • salt and freshly ground black pepper to taste
  • 1 tablespoon honey, or to taste
  • 1 (8 ounce) tub crumbled goat cheese
  • 2 tablespoons chopped fresh parsley, or more to taste
Instructions:
  • Preheat the oven to 400°F (200°C) and prepare a baking sheet by greasing it with olive oil or lining it with parchment paper.
  • In a bowl, toss butternut squash and sweet potatoes with olive oil, salt, and pepper until coated. Transfer mixture to the baking sheet.
  • After 15 minutes in the preheated oven, flip the vegetables, drizzle with honey, and sprinkle evenly with goat cheese. Continue baking until cooked through and lightly browned, around 10 minutes more. Finish by sprinkling with parsley before serving.
