Elevate your taco game with a delicious twist on this Mexican favorite using a unique filling!
Ingredients:
  • 1.5kg butternut pumpkin, peeled, thinly sliced
  • 2 tsp sumac
  • 56.88 gm olive oil
  • 10 flour tortillas
  • 150g baby rocket
  • 21.00 gm lemon juice
  • 40.00 ml pine nuts, toasted
  • 150g Greek feta, crumbled
Instructions:
  • Preheat your oven to 200°C (180°C fan-forced). On a large baking tray, combine pumpkin with sumac and 2 tablespoons of oil. Mix well to ensure everything is coated. Season with salt and pepper. Roast for 35 minutes, until the pumpkin is golden and tender.
  • Follow the packet directions to heat the tortillas. Mix rocket, lemon juice, and remaining oil in a bowl, then toss to combine.
  • Fold the tortillas to form cones, then divide the rocket mixture between them equally. Top with pumpkin and sprinkle with pine nuts and feta before serving.
