Indulge in our decadent Roasted Sweet Potato Pie - a creamy blend of roasted sweet potatoes, warm spices, and a touch of bourbon or vanilla. Effortless and comforting, it's the perfect treat for any occasion.
Ingredients:
  • 1 1/2 lb dark-orange sweet potatoes (about 2 medium-large)
  • 1 crust from 1 box (14.1 oz) refrigerated Pillsbury™ Pie Crusts (2 Count), softened as directed on box
  • 1/2 cup butter, softened
  • 1/2 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup whipping cream
  • 2 tablespoons bourbon or 1 teaspoon vanilla
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 2 eggs
Instructions:
  • Preheat oven to 400°F. Line a baking sheet with foil and arrange sweet potatoes on it. Roast for 1 hour until tender. Slice potatoes in half, scoop out pulp into a medium bowl, and discard skins. Reduce oven temperature to 350°F.
  • Prepare the pie crust in a 9-inch deep-dish pie plate according to the instructions on the box for a One-Crust Filled Pie. Use an electric mixer on medium speed to beat the sweet potato pulp until creamy. Add the remaining ingredients and beat for 1 minute until well blended. Pour the filling into the crust-lined plate.
  • Bake for 1 hour and 15 minutes or until a knife inserted near the center comes out clean. Allow to cool on a rack for 1 hour, then refrigerate loosely covered before serving. Store covered in the refrigerator.
