Savor this quick and delicious sweet potato salad – a perfect side dish ready in just 45 minutes.
Ingredients:
  • 4 medium sweet potatoes (about 1 1/2 lb), peeled and cut into 1 1/4-inch cubes
  • 2 tablespoons butter, melted
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil
  • 2 tablespoons raspberry jelly or seedless jam
  • 1 teaspoon packed brown sugar
  • 2 tablespoons lemon juice
  • Dash of crushed red pepper flakes
Instructions:
  • Preheat oven to 400°F on middle rack.
  • Combine sweet potato cubes with rich, creamy butter and a sprinkle of salt in a generously sized bowl.
  • Spread the sweet potatoes evenly on a baking sheet and roast for 20 minutes. Carefully flip the potatoes using a pancake turner. Roast for an additional 10 to 15 minutes or until they are evenly browned and cooked through without being mushy. Transfer the roasted sweet potatoes to a large bowl.
  • In a 1-quart saucepan, combine oil, jam, brown sugar, lemon juice, cinnamon, and red pepper. Heat the mixture until it boils, stirring until the jam melts. Drizzle the dressing over the hot sweet potatoes, tossing gently to coat. Let it cool slightly before serving warm.
