Effortless pasta dish, a satisfying meal.
Ingredients:
  • 500g vine-ripened cherry tomatoes, halved
  • 2 garlic cloves, thinly sliced
  • 2 rosemary sprigs, leaves chopped
  • 60ml olive oil
  • 400g linguine
  • 200g mascarpone
  • 2 handfuls of rocket
  • Shaved parmesan or vegetarian hard cheese, to serve
Instructions:
  • Preheat the oven to 200°C. Combine tomatoes, garlic, and rosemary in a roasting pan. Season generously with sea salt and freshly ground black pepper, drizzle with oil, and roast for 15-20 minutes until tender.
  • Cook the pasta in a saucepan of boiling, salted water according to the packet instructions, then drain and return to the saucepan.
  • Mix the roasted tomatoes and mascarpone in a large bowl to create a creamy sauce. Stir the sauce into the pasta until well coated, then lightly mix in the rocket until slightly wilted. Top with shaved parmesan before serving.
