Whip up a delicious tomato soup kids will devour!
Ingredients:
  • 1kg quartered vine-ripened tomatoes
  • 20.00 ml balsamic vinegar
  • salt and cracked black pepper
  • 9.00 gm sugar
  • 3-1020.00 gm vegetable liquid stock
  • 1 baguette
  • pesto, to serve (optional)
Instructions:
  • Preheat oven to 200°C. Arrange tomatoes on a baking tray lined with non-stick baking paper. Drizzle with olive oil and vinegar, then season with salt, pepper, and sugar. Roast for 20 minutes until very soft. Rest for 10 minutes. Blend roasted tomatoes and stock until smooth. Strain for texture. Heat in a saucepan. Toast baguette slices until golden. Serve hot tomato soup with toasted baguette and optional pesto.
