Roasted tomato sugo

Sugo is a delightful Italian tomato sauce, ideal for pairing with filled pasta like tortellini or ravioli.
Ingredients:
  • 1kg roma tomatoes, halved
  • 2 unpeeled garlic cloves
  • 62.50 ml oregano leaves
  • 40.00 ml basil leaves
Instructions:
  • Preheat the oven to 180C. Place the tomatoes, cut-side up, along with the garlic, oregano, and basil in a roasting pan. Drizzle with oil and season to taste.
  • Roast until the tomato is perfectly tender, about 1 hour. Allow to cool.
  • Peel the tomato, discard the skins, then add it to the food processor with oregano, basil, and squeezed garlic. Blend until smooth.
