Roasted Tomato-Basil Spaghetti with Bread Crumbs

Quick and delicious summer weeknight meal.
Ingredients:
  • 1 pint cherry or grape tomatoes, halved
  • 1/4 cup fresh basil leaves, chopped
  • 3 cloves garlic, chopped
  • 3 tablespoons olive oil
  • 1/2 cup Progresso™ plain bread crumbs
  • 1 lb uncooked spaghetti
Instructions:
  • Preheat the oven to broil.
  • In a 13x9-inch (3-quart) baking dish, combine tomatoes, basil, garlic, 1 tablespoon of olive oil, and salt. Roast under the broiler, 4 to 6 inches from the heat, for 10 to 12 minutes. Stir occasionally until tomatoes are softened and juices are bubbling.
  • Combine bread crumbs and 1 tablespoon of olive oil in a small bowl. Sprinkle over tomatoes and broil for about 2 minutes until golden.
  • While the spaghetti is cooking as per package instructions until al dente, drain and toss with 1 tablespoon of olive oil. Top with roasted tomatoes and serve.
