Roasted tomatoes

Ingredients:
  • 1.2 kg of ripe mixed-colour cherry tomatoes
  • 1 bulb of garlic
  • 2 sprigs of oregano (optional)
  • olive oil
  • red wine vinegar
Instructions:
  • For future use or Jamie’s Sunny Gathering, halve tomatoes and place in roasting tray. Halve garlic, add to tray with oregano leaves. Drizzle with 1 tablespoon olive oil, 1 tablespoon red wine vinegar, salt, and pepper. Toss, cover, and chill overnight. When ready to serve, preheat oven to 180°C/350°F/gas 4. Roast tomatoes for 1 hour, then cook salmon. Enjoy hot or warm.
