Irresistible roasted tomatoes perfect for topping crostini or pasta.
Ingredients:
  • 2 tablespoons extra-virgin olive oil, plus more for greasing the pan
  • 4 cups cherry tomatoes (about 2 baskets or 1 1/2 pounds), stems removed
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly cracked black pepper, or to taste
  • 1 tablespoon honey
  • 1 tablespoon red or white wine vinegar
Instructions:
  • Preheat your oven to 300°F. Line a large baking sheet with parchment paper or a silicone baking mat. Drizzle olive oil on the sheet and evenly coat using a pastry brush or your hands.
  • Gently bundle together the tomatoes on the baking sheet, then generously drizzle with 1 tablespoon of flavorful olive oil. Sprinkle with salt and a dash of freshly ground black pepper for a burst of flavor. Spread out the seasoned tomatoes on the sheet.
  • Roast the tomatoes for an hour and prepare the dressing: In a small bowl, whisk together honey and vinegar until honey dissolves. Whisk in 1 tablespoon of olive oil. Once the tomatoes are done roasting, pour the dressing over them, and gently toss to coat evenly.
  • Roast until tomatoes are tender and beginning to caramelize, approximately 1 more hour. Serve warm or store covered in the fridge for up to 4 days. Show your love by leaving us a review below!
