Roasted Two-Potato and Sausage Hash with Poached Eggs

Create a delicious hash with potatoes, smoked chicken, and apple sausages, topped with a poached egg for a satisfying brunch in 40 minutes.
Ingredients:
  • 1 medium russet potato, unpeeled
  • 1 medium sweet potato, unpeeled
  • Cooking spray
  • 2 fully cooked smoked chicken and apple sausages (from 12-oz package), cut into 1/4-inch slices
  • 2 Land O’Lakes® cage-free all-natural eggs
Instructions:
  • Preheat oven to 425°F and line a 15x10-inch pan with nonstick foil or parchment paper.
  • Dice potatoes into 1-inch cubes and arrange them in a single layer in a baking pan. Lightly coat with cooking spray and season with salt and pepper.
  • Bake for 20 minutes, stirring halfway through. Add sausage, gently stir, then spread out in a single layer. Bake an additional 10 minutes until mixture is slightly golden.
  • In a saucepan, bring 2 inches of water to a boil, then reduce heat until water is simmering. Crack a cold egg into a custard cup or small glass bowl. Hold the cup close to the water's surface and gently slide the egg in; repeat with the other eggs. Cook uncovered for 3 to 5 minutes until the whites and yolks are firm but not runny. Remove eggs with a slotted spoon.
  • Plate the potato and sausage mixture on 2 plates, adding a poached egg on top of each. Serve right away.
