Roasted Vegetable Medley with Chipotle

Parsley and chipotle seasoned veggies are roasted to perfection for a fresh and zesty dish.
Ingredients:
  • cooking spray
  • 1 sweet potato, peeled and sliced into thin rounds
  • 1.5 cups chopped carrots
  • 0.5 cup finely chopped parsley, divided
  • 1 teaspoon chipotle pepper powder, or more to taste
  • 1 medium red bell pepper, cut into bite-sized pieces
Instructions:
  • Preheat the oven to a toasty 375 degrees F (190 degrees C) while generously coating a 9x13-inch pan with cooking spray.
  • Toss sweet potato and carrots in the pan. Top with 1/4 cup parsley and 1 teaspoon chipotle pepper powder.
  • Bake in the preheated oven for 25 minutes. Stir in bell pepper and the rest of the parsley, continue cooking until veggies are tender-crisp, for around 10 more minutes.
  • Take it out of the oven and season with salt and extra chipotle powder according to your preference.
