Rocket, pear and parmesan salad

Use crisp, ripe pears for a delicious salad.
Ingredients:
  • 2 Beurre Bosc pears, cored, thinly sliced
  • Lemon juice, to drizzle
  • 40.00 ml pine nuts
  • 56.88 gm olive oil
  • 40.00 ml balsamic vinegar
  • Salt and pepper
  • 125g baby rocket leaves
  • 62.50 ml shaved parmesan, to serve
Instructions:
  • Drizzle pears with fresh lemon juice. Toast pine nuts in a small frying pan over low heat until golden, about 1-2 minutes. Allow to cool slightly.
  • Create a delicious dressing by mixing olive oil and vinegar together, then season with salt and cracked black pepper. Whisk until evenly blended.
  • Combine fresh, peppery rocket, sweet pear slices, crunchy pine nuts, and dressing in a large bowl. Gently toss everything together, then transfer to a serving bowl and generously top with shaved parmesan.
