Pear and parmesan salad

Versatile salad perfect with roasts or steaks.
Ingredients:
  • 1 bunch rocket leaves, trimmed
  • 1 red oak lettuce, leaves separated
  • 1 witlof, trimmed
  • 2 small corella pears, cored, thinly sliced (see note)
  • 82.50 ml shaved parmesan cheese
  • 30.00 ml red wine vinegar
  • 14.40 gm honey
  • 5.90 gm dijon mustard
Instructions:
  • Combine rocket, lettuce, witlof, pear, and parmesan in a bowl.
  • Combine oil, vinegar, honey, and mustard in a screw-top jar. Shake well to blend the flavors. Pour over the rocket mixture, toss gently to ensure everything is coated, and serve.
