Rocky Road Peanut Butter Brownies

Decadent chocolate brownies with gooey marshmallows and rich chocolate-peanut butter topping make irresistible rocky road brownies.
Ingredients:
  • 0.5 cup all-purpose flour
  • 0.33333334326744 cup unsweetened cocoa powder
  • 0.25 teaspoon baking powder
  • 0.25 teaspoon salt
  • 1 cup white sugar
  • 0.5 cup butter, melted
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup peanut butter
  • 1 cup semisweet chocolate chips
  • 2 cups crispy rice cereal (such as Rice Krispies®)
  • 2 cups miniature marshmallows
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and generously grease a 9x13-inch baking pan.
  • Combine flour, cocoa powder, baking powder, and salt in a large bowl. Cream together sugar, butter, and vanilla extract in a separate bowl; gradually add eggs, one at a time, until smooth. Gently fold in the flour mixture until well combined. Transfer batter to the prepared baking pan.
  • Bake in the oven until a toothpick inserted in the center of the brownies comes out clean, approximately 20 minutes.
  • Combine peanut butter and chocolate chips in a microwave-safe bowl and microwave until chocolate chips are melted, stirring every 30 seconds, for 1 to 2 minutes. Add crispy rice cereal and microwave until mixture is smooth and spreadable, about 30 seconds.
  • Top brownies with fluffy marshmallows and bake for 2 minutes until they are lightly toasted. Drizzle chocolate mixture over the marshmallows evenly. Let cool completely before slicing into squares.
