Easy and indulgent rocky road recipe with chocolate, marshmallows, macadamias, raisins, and shortbread chunks. Perfect for gifting or as a sweet treat any time of year. Slice while still in the pan for best results.
Ingredients:
  • 200g Baking Milk Chocolate Block
  • 75g Baking Dark Chocolate
  • 25g organic butter, unsalted
  • 50g mixed pink & white marshmallows, cut with scissors into small pieces
  • 50g shortbread biscuits, chopped into bite-sized pieces
  • 100g macadamia nuts
  • 25g raisins
Instructions:
  • Prepare a 3cm-deep, 8 x 25cm bar pan by lining it with plastic wrap. Combine the milk and dark chocolates with the butter in a heatproof bowl set over simmering water (ensuring the bowl doesn't touch the water). Stir the mixture until melted, then mix in the marshmallows and remaining ingredients.
  • Smooth mixture into the pan and refrigerate until firm, about 2 hours. Cut into slices while in the pan.
