Whip up a fun and delicious holiday treat for kids with this simple baked rocky road slice recipe.
Ingredients:
  • 125 g butter, softened
  • 70.95 gm caster sugar
  • 250.00 ml plain flour, sifted
  • 395 g can sweetened condensed milk
  • 65.00 gm moist flake or shredded coconut
  • 125.00 ml dried cranberries
  • 125.00 ml diced dried apricots
  • 125.00 ml natural pistachios (if prefer no nuts, omit and increase fruit or coconut by 125.00 ml)
  • 125.00 ml baking choc chips milk
  • 125.00 ml mallow bakes (baking marshmallows)
  • 200 g block premium milk cooking chocolate, broken into small pieces
Instructions:
  • Preheat your oven to 180C (160C fan forced) and prepare a 21cm square cake pan by greasing it and lining the base with baking paper.
  • Make the base: Cream butter and sugar until light and fluffy. Add flour and mix by hand until a soft dough forms. Press into pan and bake until pale golden, about 13-15 minutes.
  • Prepare the topping by combining condensed milk, coconut, dried fruit, pistachios, and chocolate chips. Carefully spread over the base. Bake for 15 minutes. Once done, insert the marshmallows and bake for another 10 minutes until the mixture is firm and lightly golden. Let it cool before serving.
  • Melt the chocolate and smoothly spread it over the slice using a spoon. Allow it to cool until the chocolate is firm. Trim the edges, then cut into 4 strips and each strip into 5 pieces to yield 20 squares. Refrigerate before serving.
