Indulge in a no-bake Christmas rocky road cheesecake for the ultimate holiday dessert.
Ingredients:
  • 3 x 160g blocks dark milk chocolate, chopped
  • 1/2 x 250g packet butternut snap biscuits, roughly chopped
  • 375.00 ml raspberry marshmallows, plus extra to serve
  • 125.00 ml glace cherries
  • 125.00 ml roasted almond kernels
  • 62.50 gm boiling water
  • 6.00 gm gelatine powder
  • 500g cream cheese, softened
  • 141.90 gm caster sugar
  • 28.05 gm desiccated coconut
  • 13.20 gm vanilla extract
  • 126.25 gm thickened cream
  • 125g punnet raspberries, plus extra to serve
  • Extra 300ml thickened cream, whipped
  • Mini pink and white marshmallows, to serve
  • 40.00 ml chopped pistachio kernels
Instructions:
  • Prepare a 22cm round springform pan by greasing the base and lining both the base and sides with baking paper.
  • Melt 400g chocolate in a microwave-safe bowl by microwaving on HIGH (100%) and stirring every 30 seconds, for about 1 minute 30 seconds until smooth. Let cool for 15 minutes, then mix in biscuits, marshmallows, cherries, and almonds. Firmly press the mixture into the prepared pan to form the base.
  • Pour boiling water into a small heatproof jug. Sprinkle gelatine over the water and stir until fully dissolved. Allow it to cool for 5 minutes.
  • In a large bowl, mix cream cheese, sugar, coconut, and vanilla with an electric mixer until light and fluffy. Slowly pour in cream and mix until slightly thickened. While still mixing, add gelatine mixture until just combined. Gently fold in raspberries. Pour the mixture into a pan and refrigerate for 6 hours until set.
  • Place the leftover chocolate in a microwave-safe bowl. Microwave on HIGH, stirring every 30 seconds, until the chocolate is melted and smooth. Transfer the cheesecake to a serving plate. Garnish with extra whipped cream, mini marshmallows, more marshmallows, and raspberries. Drizzle with melted chocolate, sprinkle with pistachios, and serve.
