Elevate classic rocky road with these indulgent no-bake treats.
Ingredients:
  • 35g sweet and salty popcorn
  • 120g red raspberry lollies, halved
  • 400g dark chocolate (70% cocoa), melted
  • 40g roasted coconut chips, plus extra (optional)
  • 10g pkt freeze dried strawberry slices
  • 250g marshmallows, halved
  • 55g (1/2 cup) pistachios
Instructions:
  • Prepare a 20 x 30cm lamington pan by greasing the base and lining it with overhanging baking paper.
  • In a large bowl, toss together the popcorn, marshmallows, lollies, coconut chips, strawberries, and pistachios. Drizzle with chocolate, then stir until fully combined.
  • Transfer the mixture into the prepared pan and even it out. Tap the pan on a work surface to remove any air bubbles. If desired, sprinkle with additional coconut chips. Chill in the fridge for 30 minutes to firm up.
