Ingredients:
  • 250.00 ml plain flour
  • 2.50 gm cajun seasoning
  • 1 egg
  • 2 small chicken breast fillets
  • 172.50 gm vegetable oil
Instructions:
  • Combine flour and cajun seasoning in a small mixing bowl.
  • Beat the egg in a separate bowl.
  • Dice the chicken breasts into bite-sized pieces, varying from 1/2 inch to 1 1/2 inch for desired crispiness.
  • Heat oil in a small skillet over medium heat.
  • Coat chicken pieces in beaten eggs, ensuring they are completely covered. Then dredge each piece in the flour mixture, making sure to fully coat the chicken.
  • Check if the oil is hot by adding a small amount of batter. Once it sizzles, carefully place the chicken in the skillet, ensuring the oil doesn't splatter. Cook until a light golden brown color, about 3-4 minutes, then gently flip the pieces.
  • Once the chicken is cooked, remove it from the pan, allowing excess oil to drain back into the pan, and transfer it to a plate lined with two sheets of paper towel.
  • Place the fried chicken on a wire rack to allow any excess oil to drain off and ensure maximum crunchiness.
