Popcorn chicken bites with katsu sauce recipe

Make quick and fun popcorn chicken with our meal kits. Dip crispy nuggets in delicious katsu sauce for a tasty party starter.
Ingredients:
  • 1 egg, lightly whisked
  • 280g pkt Meal Kit Japanese Katsu Curry
  • 450g chicken thigh fillets, trimmed, cut into 3cm pieces
  • 1 baby cos lettuce, leaves separated
  • 1 Lebanese cucumber, thinly sliced
Instructions:
  • Preheat oven to 180C/160C fan forced, then prepare a baking tray by lining it with baking paper.
  • Crack the egg into a bowl. Spread the meal kit crumb mix on a plate. Dip the chicken in the egg, then coat it thoroughly with the crumb mix by pressing firmly. Transfer the coated chicken onto a prepared tray and generously spray it with oil.
  • Bake for 15-20 minutes, flipping halfway through, until fully cooked.
  • Heat the meal kit curry sauce gently in a small saucepan for 2-3 minutes until warmed. Then, pour it into a heatproof jug.
  • Place the fresh lettuce leaves and sliced cucumber neatly on a serving plate or tray. Sprinkle the crunchy popcorn chicken bites on top. Serve with a side of warm sauce for drizzling.
