Homemade crispy popcorn chicken, a new family favorite!
Ingredients:
  • 3 cups flour
  • 2 teaspoons garlic powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 2 tablespoons lemon juice
  • 2 cups oil, or as needed
  • 3 skinless, boneless chicken breasts, cubed
Instructions:
  • Combine flour, garlic powder, salt, and black pepper in a bowl. In a separate bowl, whisk eggs with lemon juice until well blended.
  • In a large pot, heat an abundance of oil over medium heat until it shimmers and is ready for frying.
  • Coat chicken pieces in flour mixture, shaking off excess. Dip into beaten egg, allowing excess to drip back into the bowl. Press back into flour mixture to coat evenly.
  • Gently place chicken pieces in hot oil in batches and fry until golden brown (7 to 8 minutes). Drain on paper towels and repeat with remaining chicken pieces.
