Irresistible Easter popcorn rocky road treats for children.
Ingredients:
  • 250g dark chocolate
  • 2 x 40g pkts Ready to Eat Popcorn
  • 125g pkt Mini Easter Eggs
  • 250.00 ml Pink & White Mallows
  • 12 Mini Easter Eggs, extra
  • Coles Rainbow Confetti, to sprinkle
Instructions:
  • Place paper cases in a 12-hole muffin pan with 1 1/3-cup (80ml) capacity.
  • Melt chocolate in a heatproof bowl over simmering water, ensuring the bowl doesn't touch the water. Stir occasionally until smooth, about 5 minutes. Let cool for another 5 minutes before using.
  • In a bowl, mix popcorn, chocolate eggs, and marshmallows. Pour in melted chocolate and stir well. Distribute the popcorn mixture into paper cases. Garnish with extra chocolate eggs and rainbow confetti. Chill in the fridge for 2 hours until firm.
