Easter-inspired cookies with spicy ginger and rich dark chocolate.
Ingredients:
  • 150g butter, at room temperature
  • 180.00 gm brown sugar
  • 1 egg
  • 142.50 gm dark choc bits
  • 300.00 gm self-raising flour
  • 20.00 ml MasterFoods® Ginger Ground
  • 41.20 gm milk
Instructions:
  • Preheat your oven to 160C (140C fan forced) and prepare 3 large baking trays by lining them with non-stick baking paper.
  • With an electric mixer, cream together the butter and sugar until light and fluffy. Add the egg and mix until fully incorporated. Fold in the chocolate chips, flour, ginger, and milk until just combined. Finish mixing by gently using your fingertips until the dough comes together smoothly.
  • Shape heaping tablespoonfuls of the mixture into round balls and arrange them on the prepared trays, spacing them 5cm apart, gently press to slightly flatten. Bake each tray for 15 minutes or until a light golden hue appears. Move the cookies to a wire rack to cool. Serve and enjoy!
