Whip up irresistible Easter cookies to delight your loved ones.
Ingredients:
  • 250g butter
  • 120g (2/3 cup) brown sugar
  • 125ml (1/2 cup) condensed milk
  • 1 tsp vanilla bean paste
  • 300g (2 cups) self-raising flour
  • 150g (1 cup) plain flour
  • 100g dark chocolate or milk chocolate, chopped
  • 100g chopped roasted macadamias, optional
  • 3 x 125g pkts mini eggs
  • 150g dark chocolate, melted
Instructions:
  • Preheat your oven to 180C/160C fan forced. Prepare three large oven trays by lining them with GLAD Bake & Cooking Paper.
  • In a small bowl of an electric mixer, whip softened butter until creamy. Mix in sugar until light and fluffy. Pour in condensed milk and continue beating until well-combined. Finish by stirring in vanilla.
  • Transfer the mixture to a large bowl, then gently fold in the combined flours, chocolate, and nuts if desired, using a large metal spoon until well combined.
  • Shape mixture into rounded tablespoon-sized balls and arrange on baking sheets with space in between. Gently flatten each ball. Bake for 12 minutes until lightly golden. Press 3 mini eggs into each biscuit immediately after removing from the oven. Allow to cool completely on the baking sheets.
  • Drizzle the cookies with luxurious melted chocolate, allow to cool to perfection, and then elegantly serve. Store the delectable biscuits in an airtight container with layers of GLAD Bake & Cooking Paper for freshness.
