Indulge in kid-friendly Rocky Road Popcorn Party Mix.
Ingredients:
  • 82.50 ml popping corn
  • 200g milk dark chocolate, chopped
  • 250.00 ml mini marshmallows
  • 190g packet raspberry jellies, halved
  • 32.50 gm shredded coconut
Instructions:
  • Prepare the popcorn as instructed on the packet. Transfer the popped corn to a large bowl, making sure to remove any unpopped kernels. Allow the popcorn to cool completely before proceeding.
  • Prepare a large baking tray by lining it with parchment paper.
  • Place the chocolate in a microwave-safe bowl and microwave on HIGH for 1 to 2 minutes, stirring every 30 seconds with a metal spoon until melted and smooth.
  • Drizzle half of the chocolate over the popcorn and toss to coat evenly. Add in half of the marshmallows, raspberry jellies, and 1/3 cup of coconut, then mix everything together well.
  • Spread the mixture onto the prepared tray and drizzle with the leftover chocolate. Sprinkle the remaining marshmallows, raspberry jellies, and coconut on top. Let it cool completely before serving.
  • Crush popcorn into bite-sized nuggets and present elegantly.
