Indulgent rocky road wreath with chocolate ganache, peanuts, marshmallows, and Turkish Delight - a festive hit for all!
Ingredients:
  • 335g mascarpone
  • 320.00ml thickened cream
  • 2 x 55g Fry’s Turkish Delight, chopped
  • 45g peanuts
  • 82.50 ml Pink & White Mallows
  • 400g Jam Sponge Roll
  • 50g chocolate buttons
  • Chopped Fry’s Turkish Delight, extra, to serve
  • Unsalted toasted peanuts, extra, to serve
  • Coles Pink & White Mallows, extra, to serve
  • 250g chocolate buttons
Instructions:
  • In a large bowl, use an electric mixer to whip the mascarpone and cream until stiff peaks form. Gently fold in the Turkish Delight, peanuts, and marshmallows.
  • Slice jam roll into 2cm-thick pieces. Spread half with mascarpone mixture, then stack with remaining jam roll slices to create a ring shape. Fill any gaps with the remaining mascarpone. Chill in the fridge for 1 hour until set.
  • Create a luxurious chocolate ganache by gently melting chocolate and cream together in a heatproof bowl over simmering water (ensure the bowl doesn't touch the water). Stir until smooth, then chill in the fridge for 1 hour until it reaches a spreadable consistency.
  • Cover the jam roll with indulgent ganache, then drizzle with creamy white chocolate. Sprinkle extra Turkish Delight, peanuts, and marshmallows on top for a delightful finish.
