Rogaliki (Polish Jam-Filled Crescents)

Delight in traditional Polish rogaliki - a sweet blend of pastry and cookie with a soft texture and delectable jam filling.
Ingredients:
  • 3.5 ounces compressed fresh yeast
  • 7 tablespoons milk
  • 5.5 cups all-purpose flour, or more as needed
  • 2.25 cups unsalted butter, at room temperature
  • 4 tablespoons sour cream
  • 4 tablespoons white sugar
  • 3 egg yolks
  • 1.5 cups plum jam
  • 2.5 cups confectioners' sugar
  • 2 tablespoons water, or as needed
Instructions:
  • Combine the milk and yeast in a bowl, stirring until smooth. Let it sit for approximately 10 minutes until it becomes foamy.
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare a baking sheet by lining it with parchment paper.
  • Mix flour, butter, sour cream, sugar, eggs, and egg yolks in a large bowl. Add yeast mixture and blend thoroughly with an electric mixer before finishing by hand.
  • Transfer the dough onto a floured surface and knead until smooth, incorporating more flour, 1 tablespoon at a time, if needed. Shape the dough into a long log and slice into 1 1/2-inch rounds. Cover the rounds with a cloth.
  • Roll the dough into thin circles, then cut each into six triangles. Spread 1 teaspoon of jam at the wider end of each triangle, roll them up like croissants, and place on the baking sheet. Repeat with the remaining dough.
  • Bake rogaliki in the preheated oven until they have risen and turned golden brown, approximately 20 minutes. Allow them to cool completely outside the oven for about 30 minutes.
  • In a bowl, combine confectioners' sugar with water, adding 1 tablespoon at a time until it reaches a drizzling consistency. Drizzle the icing over the cooled rogaliki.
