Indulgent chocolate caramel cookie bombs are a warm, gooey delight.
Ingredients:
  • 2.5 cups all-purpose flour
  • 0.75 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1 cup white sugar
  • 1 cup firmly packed brown sugar
  • 1 cup butter, softened
  • 2 teaspoons vanilla extract
  • 48 chocolate-covered caramel candies (such as Rolo®)
  • 4 ounces chocolate almond bark (chocolate confectioners coating)
Instructions:
  • Preheat your oven to 375°F (190°C) for the perfect cooking temperature.
  • In a small bowl, combine flour, cocoa powder, and baking soda. In a large bowl, cream together 1 cup of white sugar, brown sugar, and butter until light and fluffy. Add vanilla extract and eggs, then mix well. Gradually stir in the flour mixture until fully combined.
  • Dust hands with flour. Encase 1 chocolate-covered caramel candy with about 1 tablespoon of dough until fully covered. Repeat with remaining dough and caramels.
  • In a small bowl, sprinkle 2 tablespoons of white sugar. Press one side of each dough ball into the sugar. Arrange the balls, sugar side up, on a baking sheet, keeping them about 2 inches apart.
  • Place cookie dough in the warm oven until it's firm with a slight crack, 7 to 10 minutes. Let it sit on the baking sheet for around 2 minutes before moving to a wire rack to cool completely.
  • Gently melt almond bark in a saucepan over low heat, then elegantly drizzle it over the cookies.
