Delicious romanesco with panko and Parmesan crust, perfect for a quick and tasty meal.
Ingredients:
  • butter for baking dish
  • 1 head Romanesco, leaves and stems removed
  • salt and freshly ground black pepper to taste
  • 1 teaspoon Italian seasoning
  • 3 tablespoons unsalted butter, thinly sliced and chilled
  • 0.5 cup panko bread crumbs
  • 0.33333334326744 cup freshly grated Parmesan cheese
Instructions:
  • Preheat your oven to a toasty 425°F (220°C) while you generously butter a 10-inch oval au-gratin baking dish.
  • Break the romanesco into big florets.
  • In a generously salted pot of boiling water, cook romanesco florets until slightly softened, around 3 minutes. Drain thoroughly.
  • Place the florets elegantly in the baking dish, then generously season them with salt, black pepper, and Italian seasoning. Scatter thin slices of butter over the top before sprinkling with a mixture of panko and Parmesan cheese.
  • Bake in a hot oven until lightly browned on top, about 30 minutes. Serve hot.
