Exotic Romano beans, infused with garlic, mint, olive oil, and vinegar, create a flavorful and vibrant side dish.
Ingredients:
  • 1 pound fresh romano or green beans, trimmed
  • 2 cloves garlic, sliced
  • 2 tablespoons olive oil
  • 2 fresh mint leaves, torn
  • salt and freshly ground black pepper to taste
  • 2 tablespoons white wine vinegar
  • 2 mint leaves, for garnish
Instructions:
  • 1. Bring a generously salted pot of water to a boil. Cook beans uncovered until almost tender, approximately 5 minutes. Drain thoroughly and transfer to a spacious bowl.
  • Combine garlic, olive oil, fresh mint, and salt in a mortar and pestle and crush into a flavorful paste.
  • Drizzle half of the olive oil and vinegar mixture over the beans and mix thoroughly.
  • Place the beans in a resealable freezer bag and add the remaining olive oil mixture. Remove all the air from the bag, seal it tightly, and refrigerate for at least 4 hours.
  • Take the chilled beans out of the fridge, garnish with fragrant fresh mint, and present them for a delightful meal.
