Elevate vegetables with flaky sea salt, fresh rosemary, and thyme for exquisite flavors.
Ingredients:
  • 12 (about 1.7kg) coliban (washed) potatoes, peeled, halved
  • 1/2 (about 1.5kg) Kent pumpkin, unpeeled, halved crossways, cut into 4cm-thick wedges
  • 4 small (about 550g) red onions, peeled, halved
  • 62.50 ml chopped fresh rosemary
  • 40.00 ml fresh thyme leaves
  • 9.60 gm sea salt flakes
Instructions:
  • Preheat the oven to 200°C. Spread out the potato, pumpkin, and onion in a large roasting pan. Drizzle with oil and mix well to coat evenly.
  • Mix the fragrant rosemary, thyme, and salt in a small bowl. Sprinkle the herb blend over the vegetables. Roast in the oven, flipping once, for 1 1/4 hours until they are tender and beautifully golden. Serve and enjoy.
