Elevate your mini dampers with premium Mainland Pure Butter and Real Sea Salt Crystals for irresistible flavor and richness.
Ingredients:
  • 450g self-raising flour
  • 100g Pure Butter with Real Sea Salt Crystals, chilled, chopped
  • 40.00 ml chopped chives
  • 40.00 ml chopped rosemary
  • 40.00 ml chopped thyme
  • 250ml milk
  • Milk, extra, to brush
  • Chopped chives, extra, to serve
  • Mainland Pure Butter with Real Sea Salt Crystals, extra, to serve
Instructions:
  • Preheat your oven to 200°C. Lightly sprinkle flour over a large baking tray.
  • Combine the flour and butter in a large bowl, then use your fingertips to rub the butter into the flour until it resembles fine breadcrumbs. Next, stir in the chives, rosemary, and thyme, and make a well in the center.
  • Pour the milk into the flour mixture and gently stir with a round-bladed knife until a dough forms. Transfer the dough onto a lightly floured surface and shape into a 2cm-thick disc. Cut out 12 discs using a 5cm pastry cutter.
  • Place the discs on the prepared tray, gently pressing them together. Brush with additional milk and use a small sharp knife to make cuts on the tops. Bake for 20 minutes or until the dampers are puffed up and golden brown. Let them cool for a bit, then sprinkle with extra chives before serving warm with more butter on the side.
