Rosemary and garlic roast potatoes

Crisp, golden rosemary and garlic potatoes - the perfect Christmas side dish!
Ingredients:
  • 1kg baby Red Royale potatoes, peeled, halved
  • 36.80 gm vegetable oil
  • 40.00 ml small rosemary sprigs
  • 6 garlic cloves, unpeeled
  • Rosemary sprigs, extra, to serve
Instructions:
  • Preheat the oven to 200C. Boil the potato in salted water until slightly tender, then roughen the surface by draining in a large colander.
  • In a large flameproof roasting pan, heat the oil over high heat. Season the potato, add it to the pan, and cook while turning for 5 minutes, or until the potato is lightly golden. Remove from the heat.
  • Season the potato generously with fragrant rosemary. Surround the potato with garlic in the pan. Roast, flipping occasionally, for 30 minutes or until the potato is beautifully golden brown and crisped to perfection. Garnish with more aromatic rosemary when serving.
