Creamy potato bake, perfect for any meal - BBQ or roast.
Ingredients:
  • 1.5kg desiree potatoes
  • 4 garlic cloves, thinly sliced
  • 20.00 ml rosemary leaves, finely chopped
  • 125ml cream
  • 125ml chicken stock
  • 2 tsp whole rosemary leaves
Instructions:
  • Preheat the oven to 200°C. Grease a rectangular ovenproof dish that is approximately 29 x 19 x 5cm deep. Peel and thinly slice the potatoes, aiming for slices that are 3-5mm thick.
  • Layer one-third of the potato slices in the dish, sprinkle half of the garlic and rosemary. Repeat with another layer of potatoes, the rest of the garlic, and chopped rosemary. Finish with a final layer of potato slices.
  • In a jug, blend the cream and stock with a fork. Pour over the potatoes. Sprinkle with freshly ground black pepper and garnish with whole rosemary leaves.
  • Cover the dish tightly with foil and bake for 30 minutes until the potatoes are tender. Uncover and bake for an additional 30 minutes until the top is golden brown. Let it stand for 5 minutes, then cut into rectangles before serving.
