Bok choy salad with sweet soy vinaigrette, toasted almonds, sesame seeds, and crispy ramen.
Ingredients:
  • 0.5 cup red wine vinegar
  • 0.5 cup olive oil
  • 0.5 cup white sugar
  • 1 tablespoon soy sauce
  • 0.25 cup margarine
  • 0.25 cup blanched slivered almonds
  • 0.25 cup sesame seeds
  • 2 (3 ounce) packages ramen noodle pasta, crushed
  • 1 medium head bok choy
  • 3 green onions
Instructions:
  • Whisk vinegar, oil, sugar, and soy sauce in a small bowl, and set aside.
  • In a small skillet over medium heat, melt the margarine until it's sizzling. Crush the ramen noodles inside the package, then mix them with almonds and sesame seeds into the melted margarine. Saute everything together until beautifully golden. Drain on a paper towel once done.
  • Finely chop the bok choy and green onions and place them in a large bowl. When ready to serve, sprinkle the noodle mixture and dressing over the top, then toss gently to evenly coat everything.
