Cozy chicken noodle soup with rotisserie chicken and vegetables, ideal for nurturing anyone in need of comfort and healing.
Ingredients:
  • 1 teaspoon dried oregano
  • 1 tablespoon olive oil
  • 1 pound carrots, sliced diagonally
  • 1 cup chopped celery
  • 0.5 medium yellow onion, chopped
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon seasoned salt
  • salt and ground black pepper to taste
  • 2 cloves garlic, minced
  • 4 cups chicken broth, or to taste
  • 1 (8 ounce) package extra-wide egg noodles
  • 1 cooked rotisserie chicken - skinned, boned, and meat shredded
Instructions:
  • In a Dutch oven over medium-high heat, sauté carrots, celery, onion, oregano, Italian seasoning, salt, pepper, and both salts until veggies are soft, about 6 to 8 minutes. Add garlic and cook for another minute until aromatic.
  • Pour in the rich chicken broth and bring it to a lively boil. Then, gently stir in the egg noodles and cook for 5 minutes until perfectly tender.
  • Fold in the shredded chicken with care and let it simmer until the egg noodles are tender and the chicken is heated thru, for about 2 to 3 minutes.
