Creamy sour cream chicken with egg noodles is a comforting and quick family meal using rotisserie chicken.
Ingredients:
  • 1 (16 ounce) package egg noodles
  • 0.25 cup butter
  • 0.25 cup chopped onion
  • 1 tablespoon minced garlic
  • 1 cup milk
  • 1 cup half-and-half
  • 6 tablespoons all-purpose flour
  • 30 ounces chicken broth
  • 1 (3 pound) rotisserie chicken, bones removed and meat cut into bite-size pieces
  • 1 cup sour cream
  • salt and ground black pepper to taste
Instructions:
  • 1. Boil a large pot of lightly salted water. 2. Cook egg noodles in the boiling water, stirring occasionally, until al dente, for 7 to 9 minutes. 3. Drain noodles and place them in a large serving bowl.
  • In a large skillet over medium heat, melt butter. Stir in onion and garlic, cooking until onion is translucent, about 5 minutes. Combine milk, half-and-half, and flour in a lidded jar, shake well. Pour into the skillet, whisking until smooth and thick, about 5 minutes.
  • Slowly pour in the chicken broth while whisking continuously until it reaches a simmer. Mix in the cooked chicken and sour cream, then season with salt and black pepper. Gently fold in the cooked noodles until everything is well combined.
