Royal icing: sweet white icing, dries quickly for gingerbread houses and holiday cookies.
Ingredients:
  • 4 pasteurized egg whites
  • 4 cups sifted confectioners' sugar
  • 1 teaspoon lemon extract
Instructions:
  • Prepare your mise en place.
  • Using an electric mixer, beat egg whites in a large glass, metal, or ceramic bowl at high speed until foamy.
  • Slowly incorporate the sugar and lemon extract into the mixture while beating vigorously until it thickens.
