Highlighting vibrant Jazz apples in a cozy winter dessert.
Ingredients:
  • 4 Jazz apples, cored
  • 40g butter, at room temperature
  • 40.00 ml slivered almonds
  • 40.00 ml raisins
  • 80g (1/2 cup, lightly packed) brown sugar
  • 80ml (1/3 cup) water
  • 20.00 ml rum
  • 125ml (1/2 cup) pouring cream
  • Double cream (optional), to serve
Instructions:
  • Preheat the oven to 180°C. Make a horizontal cut around each apple without cutting all the way through to avoid the skin from splitting while cooking.
  • In a bowl, mix together the butter, almonds, raisins, and half of the sugar.
  • Fill apple centers with mixture. Place apples in baking dish. Sprinkle remaining sugar around apples. Pour water and rum over apples. Bake for 35 minutes until apples start to soften. Add pouring cream and bake for an additional 5 minutes until apples are soft. Transfer apples to serving plates. Stir brown sugar sauce until smooth and drizzle over apples. Serve with double cream.
