Rum and raisin bread and butter pudding

Elevate bread and butter pudding with rum-soaked raisins. Top with ice cream and strawberries.
Ingredients:
  • 70.95 gm caster sugar
  • 3 large eggs
  • 1 orange, rind finely grated
  • 20.00 ml rum
  • 450.63 gm light milk
  • 5 slices raisin bread, halved diagonally
  • 12.00 gm pure icing sugar
  • 4 scoops low-fat ice-cream, to serve
  • 250g sliced strawberries, to serve
Instructions:
  • Coat a 5cm deep, 20cm (base), 5-cup capacity baking dish with a light spray of oil.
  • In a bowl, combine sugar and eggs. Beat until pale using a fork. Mix in vanilla, orange rind, rum, and milk until well combined.
  • Lay slices of bread in dish, slightly overlapping. Drizzle with egg mixture and let sit for 20 minutes.
  • Preheat the oven to 170°C. Place the pudding on a baking tray and bake for 35-40 minutes until set. Sprinkle with icing sugar and serve with ice cream and strawberries.
