Hearty dark rye bread with tender crumb, tangy bite, and subtle licorice flavor from caraway and fennel seeds. Easy to make in a bread machine or stand mixer.
Ingredients:
  • 1.5 cups water
  • 2.5 cups bread flour
  • 1 cup rye flour
  • 2 tablespoons margarine
  • 2 tablespoons dark corn syrup
  • 1 tablespoon brown sugar
  • 3 tablespoons unsweetened cocoa powder
  • 1 teaspoon instant coffee granules
  • 1 tablespoon caraway seed
  • 0.25 teaspoon fennel seed
  • 2 teaspoons active dry yeast
Instructions:
  • Add ingredients to the bread machine following the manufacturer's recommended order.
  • Select the whole wheat setting for the crust.
  • Once the baking cycle is complete, gently take out the bread from the pan and transfer it onto a cooling rack. Let it cool for 1 hour before slicing into delicious pieces.
