Russian-inspired cabbage and egg pie with puff pastry layers and fresh dill.
Ingredients:
  • 3 tablespoons butter, or more to taste
  • 1 small head cabbage, finely chopped
  • 3 hard-boiled eggs, peeled and chopped, or more to taste
  • 3 sprigs fresh dill, finely chopped, or to taste
  • 2 sheets yeasted puff pastry
  • 1 egg, beaten
Instructions:
  • In a spacious skillet, melt butter over gentle heat. Cook cabbage until tender but not browned, approximately 30 minutes. Set aside to cool for 10 to 15 minutes before proceeding.
  • Preheat your oven to a toasty 400 degrees F (200 degrees C).
  • Combine the cooled cabbage with hard-boiled eggs and fragrant dill, then season generously with salt.
  • Place a sheet of puff pastry in a pie plate. Fill with cabbage, ensuring there is a gap around the edge. Place the second sheet of puff pastry on top and seal the edges by pinching them together. Brush the top with beaten egg for a shiny finish.
  • Bake until beautifully golden for 40-45 minutes in the preheated oven.
