Russian-style cabbage rolls filled with a savory mixture of pork, beef, rice, and vegetables.
Ingredients:
  • 1 medium head cabbage
  • 2.5 cups water, divided
  • 0.75 cup uncooked white rice
  • 3 tablespoons vegetable oil, divided
  • 2 onions, chopped, divided
  • 1 pound ground beef
  • 0.75 pound ground pork
  • 3 carrots, grated
  • 3 tablespoons tomato paste
  • 2 tablespoons sour cream
  • 1 teaspoon dried mixed herbs, or as needed
Instructions:
  • Prepare the cabbage by making slits in the base or cutting out the core. In a large saucepan, bring water to a boil filling it 1/3 full. Boil the whole cabbage, rotating it occasionally, until softened, for about 15 to 20 minutes. Drain and let cool. Carefully remove the cabbage leaves one by one, aiming to keep them whole. Trim any tough center ribs from the larger leaves using a sharp knife.
  • In a saucepan, bring 1 1/2 cups of water and rice to a boil. Cover, reduce heat to medium-low, and simmer for 20 to 25 minutes until rice is tender and liquid is absorbed.
  • Heat 2 tablespoons of oil in a skillet until sizzling. Sauté 1/2 of the onions until they are soft and translucent, about 5 minutes. Transfer to a large bowl and combine with cooked rice, ground beef, ground pork, salt, and pepper. Mix everything together by hand until the filling is thoroughly combined.
  • Place 1 cabbage leaf on a flat surface. Add 1 tablespoon of filling at the base of the leaf. Fold in the sides and roll up, overlapping with the bottom of the leaf. Repeat with remaining cabbage and filling.
  • Heat 1 tablespoon of oil over medium-high heat and brown cabbage rolls for 2 to 3 minutes on each side. Move rolls to a large pot and top with remaining onion and grated carrots.
  • Combine tomato paste and sour cream in a bowl, mix well. Whisk in 1 cup water, season with salt and herbs, then pour over the cabbage rolls.
  • Simmer the pot with the lid on until the cabbage rolls are tender and the sauce is thickened, around 45 minutes.
