Ingredients:
  • 750g waxy potatoes (such as kipfler or Anya), peeled, sliced
  • 2 carrots, halved lengthways, sliced
  • 200g pea
  • 225g mayonnaise
  • 6 cornichons (small pickled cucumbers), finely chopped
  • 20.00 ml capers, rinsed, finely chopped
  • 11.80 gm Dijon mustard
  • 40.00 ml chopped flat-leaf parsley
Instructions:
  • 1. Boil potato in salted water for 5 minutes until partially cooked. Proceed by adding carrots and cooking for 2 more minutes. Next, introduce peas and cook for an additional 1 minute until all vegetables are tender. Drain, cool, and gently pat dry. 2. Prepare the dressing, season to taste, and toss it thoroughly with the cooked vegetables. Serve by transferring the mixture to a portable serving dish.
