Sweet, tangy, and spicy marinade for chicken thighs or breasts with maple syrup, rice vinegar, and seasonings.
Ingredients:
1clovegarlic, sliced, or more to taste
2teaspoons Asian chile pepper sauce (such as sambal oelek), or more to taste
1.5 tablespoons maple syrup
2tablespoons soy sauce
2tablespoons mayonnaise
3tablespoons rice vinegar
salt and freshly ground black pepper to taste
2pounds skinless, boneless chicken thighs
1lime, cut into 8 wedges
Instructions:
Create a smooth garlic paste using a mortar and pestle. Combine chile pepper sauce, maple syrup, soy sauce, mayonnaise, and rice vinegar with the garlic until the marinade is well mixed.
Place the chicken thighs in a spacious flat container like a baking dish, then generously coat them with the marinade. Cover the dish with plastic wrap and chill for about 3 hours, or if you prefer, let it sit at room temperature for 30 minutes. Uncover the dish and sprinkle the chicken with salt before cooking.
Fire up the charcoal grill until it's piping hot.
Grill chicken thighs until they develop grill marks on both sides, about 3 minutes per side. Cook, flipping every 2 minutes, until the meat is no longer pink inside and thighs are golden brown, for a total of 10 to 12 minutes.
Place the chicken on a platter, allow it to rest for 5 minutes, and serve with lime wedges for garnish.
