Sweet, tangy, and spicy marinade for chicken thighs or breasts with maple syrup, rice vinegar, and seasonings.
Ingredients:
  • 1 clove garlic, sliced, or more to taste
  • 2 teaspoons Asian chile pepper sauce (such as sambal oelek), or more to taste
  • 1.5 tablespoons maple syrup
  • 2 tablespoons soy sauce
  • 2 tablespoons mayonnaise
  • 3 tablespoons rice vinegar
  • salt and freshly ground black pepper to taste
  • 2 pounds skinless, boneless chicken thighs
  • 1 lime, cut into 8 wedges
Instructions:
  • Create a smooth garlic paste using a mortar and pestle. Combine chile pepper sauce, maple syrup, soy sauce, mayonnaise, and rice vinegar with the garlic until the marinade is well mixed.
  • Place the chicken thighs in a spacious flat container like a baking dish, then generously coat them with the marinade. Cover the dish with plastic wrap and chill for about 3 hours, or if you prefer, let it sit at room temperature for 30 minutes. Uncover the dish and sprinkle the chicken with salt before cooking.
  • Fire up the charcoal grill until it's piping hot.
  • Grill chicken thighs until they develop grill marks on both sides, about 3 minutes per side. Cook, flipping every 2 minutes, until the meat is no longer pink inside and thighs are golden brown, for a total of 10 to 12 minutes.
  • Place the chicken on a platter, allow it to rest for 5 minutes, and serve with lime wedges for garnish.
